Signature Brew launches Anthology

East London-based Signature Brew has announced the launch of its new beer, a 10% imperial stout.

The beer is personal expression of head brewers Riina Lääts’ brewing expertise.

Lääts, who joined the Leyton business 12 months ago from Estonia’s Sori Brewing, has been working with Signature Brew founders Tom Bott and Sam McGregor to refine the brewery’s core range.

The 10% ABV beer features six different malts, healthy additions of Chinook hops and the addition of cacao nibs adding profoundly bittersweet chocolate notes.

Commenting on the beer, Lääts said: “As the nights have started drawing in and we begin to head to the cosiest pubs possible it seemed a deep, velvety imperial stout was the only option!

“The style also lends itself to being regularly reworked for each annual edition and the scope for twisted spin-offs is endless. All of the guys here are already pitching their ideas for next years version, so watch this space…”

Anthology will become an annuall release beer with future releases including barrel-aged versions, with some of this year’s batch has been put aside for maturation in oak.

Signature Brew co-founder Tom Bott added: “2017 has been a good year for new beers coming out of our Leyton home and Anthology is the pinnacle of our brewing expression. Everyone in the team has excitedly observed the beers development and we now can’t wait to share it with the world.

“This is a beer that should be shared with friends while listening to a classic record, or better still aged for future enjoyment.”
