Born in Limerick, Ireland, Fergus studied Biotechnology in Waterford before starting his brewing career in 1995 in the Lab at Fuller, Smith & Turner in London. After a short spell at Murphy’s Brewery in Cork, he returned to Fuller’s in 1997, where he spent seven years moving from quality control into brewing. Fergus joined Adnams in Southwold in 2004 as Assistant Brewer and became Head Brewer in 2008 and is now Operations Director, with responsibility for brewing, distilling, packaging, warehousing, supply chain and engineering.
Over those 22 years at Adnams, he has helped guide the business through several period of major change, including the installation of a new brewhouse, distillery, tank farm, kegging line and dealcoholisation plant. Throughout that time, the challenge has been to embrace new technology and sustainable ways of working while respecting the heritage and character of a 154-year-old brewery.
