Phantasm of the Hopera is a 4.5% ABV hazy New England Pale Ale, a zingy beer with notes of melon and lychee and it’s also the world’s first cask beer made with Phantasm

Created as a collaboration between Saltaire Brewery and Mondo Brewing Company, Phantasm of the Hopera was inspired and created with one ingredient in mind, Phantasm.

Derived from Marlborough Sauvignon Blanc grapes in New Zealand, celebrated for their tropical fruit flavour, Phantasm is a powder created with the skins of these grapes which are naturally high in thiol precursors. A thiol precursor being an organic flavour compound, which can be ‘unlocked’ when subject to the correct conditions to release a whole load of tropical fruit flavours.

The aromas created from using Phantasm have well and truly changed the game for IPAs and became first on the list of ingredients to use in this collaboration beer.

Using Phantasm in both keg and can format has already been done, but this is the first time it has also been brewed for cask. The relationship between the two breweries was established a few years ago, when Todd (Mondo Brewing Company co-founder and co-owner) and Nick (Saltaire Brewery sales and marketing director) toured Maine together, creating a connection between the two breweries and their latest beer Phantasm of the Hopera, the result of a long­ standing relationship.

Working with Mondo has been “an inspiration to think of new ways to use our very traditional brew kit for creating more modern beer here at Saltaire. It’s led us to think outside the box in order to make the most out of our kit when creating new and exciting beers.” Says Rob Cooke, Development Brewer at Saltaire Brewery.

Cask remains firmly at their core and is now joined by cans of modern craft beer and bottles of authentic continental lager. Central to their belief is in making the highest quality of beer, using traditional methods, with a modern twist. Saltaire Brewery call this Beer. Done. Right.

Mondo Brewing Company is a brewery founded on its global influences, which may be unsurprising as Mondo translates to “world”.
