Talk title: A convergence of the old and the new
Ross will walk us through the brewery’s production approach to Trappist beers. These beers, dark ales that matured through secondary fermentation and deepens in flavour with age usually get their names from the monastery’s location. Theirs is named ‘Tynt Meadow’ to honour the land where monastic life began in the Midlands nearly two centuries ago.

Ross Adams is the head brewer Mount Saint Bernard Abbey. With previous experience at London-based outfits such as Wild Card and Hackney, Ross has overseen production in Leicestershire since 2022. At the heart of their process, the monks at Mount St Bernard Abbey Brewery oversee the bottle fermentation of Tynt Meadow. This ensures that this dark ale is rich in history and simplicity, yet complexly rewarding.
